iTunes 7 does have this weird gapless playback thing, but it only runs whenever you first put songs into your library (or when you first open the newly downloaded/installed iTunes, and with a sizable library, 3000+, it'll take 30 minutes to run completely, plus, you can turn it off.) Also, any bugs with the system - distorted sound and rampant CPU usage - seem to be whenever your computer is running video from an outside iTunes location... although, I could play Starcraft and listen to tunes without a problem.
iTunes (6) definitely starts to screw up too just by being on your computer for a long time... I've started to notice some very minor problems creep into it. But I can't really imagine what on earth is happening to yours. Guesses: If it still acts up, hit ctrl-alt-del whenever you're running it and using it, and see if any processes jump up all crazy like. You could have a very fragmented hard drive, too. That'll really slow down the process of finding a song, especially with iTunes.
