Sunflower seeds.
The act of turning your head to spit them out the window, or spitting them into a cup will keep you awake.
That being said... 20 minute naps on the side of the road every 6 - 8 hours will do wonders as well.
Pulling over and jogging around the car 5 or 6 times is also good. Just make sure you take your keys with you... GRIN
I regularly take 10 hour drives from Alberta to Saskatchewan (where God knows there isn't a lot of scenery) after finishing an 8 hour work day. While I will take a quick nap if I have to, the sunflower seeds and jogs around the car do wonders. I tend not to drink anything if I don't have to, because I hate having to stop to pee... GRIN
