This is speculation, too, but I would use it like this
Enrolled in ____ - That's fine, but generally I would use it to further describe something, "I am enrolled in Texas A&M's business school" (More specific)
And "I'm enrolled at A&M." (More general)
And Enrolled with, what ratbastid said. (More unusual)
