My dad is the same as your dad...he has everything he needs, and he doesn't want "stuff". We always take him to breakfast, have a nice chat, and we buy him some good beer because he definitely loves his beer. He is happy as a clam about spending family time and making one less run to the liquor store. I agree with mal...time is the best gift for almost all occasions.
