Beef Kebabs
1 pound boneless beef round tip steak cubed 1 1/4"
the marinade...
2 T water
2 T red wine vinegar
2 T coarse grain dijon mustard
2 cloves garlic minced
2 t extra virgin olive oil
fresh ground black pepper
combine all the marinade ingredients in a bowl whisking well - in a tight sealing zip lock bag pour the marinade over the cubes and seal - shake to coat - refridgerate 6 - 8 hours turning occasionally
1/2 medium red onion cut in 3/4" wedges
1 medium yellow summer squash cut lengthwise in half and into 1" chunks
1 medium red or green bell pepper cut into 1" pieces
on bamboo skewers soaked for 10 minutes in water alternate the beef and veggies
on a hot grill over ash covered coals or gas grill set medium - high cook uncovered for no more than 4 minutes per side for medium - turning once
i serve this with whole grain rice and cantelope with blue cheese dressing
this steak is lean but the marinade makes it juicy if cooked over high heat and turned once
