Pork tenderloin with Summer Salsa
I'm one of those people who doesnt think that sweet and savory go together - fruit is sweet and should never be mixed with real food - that'd be like putting chocolate pudding on steak... I like my sweet seperate... Salsa is the one exception to the rule - I l ove me some fruit salsa...
Summer Salsa
2 mangos, diced
1 kiwi, peeled and diced
1/2 cup strawberries, stemmed and chopped
1 small can of chopped/diced pineapple w/ juice but save part of the juice for the pork)
1 jalepeno, seeded and finely chopped
1 small handful of cilantro leaves, chopped
juice of one lime
(other fruit you could add would be papaya, watermelon, cantelope or other melon.. use your imagination - I'm also thinking it would be interesting to use mint instead of cilantro... I may have to fruit salsa again...)
I'm sure fresh pineapple would be better, but i'm lazy and never quite learned how to cut a pineapple
Mix all ingredients together and refrigerate over night... the longer the better.
Pork tenderloin
1 -2 pork tenderloins
1/2 cup prepared teriyaki sauce
splash of pineapple juice from the salsa above
1 good squeeze of honey
2 cloves garlic, smashed
juice of one lime
(Pork tenderloins are relatively cheap... so this recipe is easily tripled or more for a crowd)
Put pork, teriyaki sauce, pineapple juice, lime juice and honey into a ziplock bag... let marinate a few hours (or over night)
Remove pork from marinade and toss out marinade
Grill pork until done (usually 5 - 7 minutes per side depending on the size of the tenderloin)
(this salsa is also extremely awesome with grilled chicken or turkey -i'd imagine it'd be plenty good with grilled fish too... )
