It would be a cop out for sure. The whole second disc of 'In Your Honor' is entirely acoustic. Even still I would enjoy FF on unplugged.
I would love to see John Mayer on that show too, just because he's a much better guitarist than Jack Johnson and Dave Matthews. Especially after I've seen some stuff where John plays acoustic with Clapton, and other greats like B.B. King.
