I have a recipe for avocado mousse (sweet). It's interesting but I prefer my avocados salty. I love guacamole, but my favourite is:
Slice an avocado in half and take out the stone. Then prepare a vinaigrette (olive oil, red wine vinegar, salt and pepper, mustard, and maybe some herbs of your choice) and fill the empty half of the avocado. Eat with a spoon! Yum, of course this is to serve 2 people.
