Personally, I'd like to see a store with high-end and good quality equipment (professional kerambits, Benchmade and Emerson folding tactical knives, ...etc.) but most people can't afford that stuff. What you carry depends on the demographics and/or the type of customer you're trying to attract.
Please don't become like the vast majority of shops that become warehouses for cheap, useless "fantasy blades" folding knives, katanas/wakazashis/tantos made in Spain and shuriken.
Some of the staples to consider ... Bo staves, Jo staves, escrima sticks (burnt rattan and hardwoods) ...
