I found this looking for some DFW contruction costs per square foot information and this is very important to keep in mind:

The key to accurate construction estimating is complete information. A contractor must take into account each different type of expense involved before making a bid on a project. In many cases, this involves compiling large amounts of data from numerous different sources, then summarizing the data in a format that is easy to understand and track. Generally in construction estimating, a set of drawings and specifications are included in the scope to help determine what is required to perform the tasks. From these specifications the quantities, direct labor, equipment, and overhead costs are determined.

I think in general we need to know several things before anyone can give you any ideas:

1. Will this have exterior exposed walls?
2. What if any plumbing or HVAC will be needed?

I remember an architect starting at $100/sqft...give or take.

Another thing to consider RIGHT NOW will be the lack of contractors avail in the GULF region in general due to the abundance of sweet insurance and government funded hurricaine reconstruction jobs.

I think if you had a problem in the past with a contractor that you should shop around and review references. They're some shady ones to be sure, but the VAST MAJORITY are top notch, honest, hard working, and deliver quality and reasonably priced services. I think you had a one off, bad experience.
