I've never done this in a public bathroom...
Buuut uhh... yeah... I've done it at home. I'll be on the phone with someone, have to pee really bad... so I'm just like, "Hey I'm gonna pee... just keep talking."
They'd probably hear me peeing anyway even if they were in my home and the bathroom door was closed.
Pooping, on the other hand, I'd probably be like, "Hey I gotta poop. I'll call you back in a few minutes." Actually... maybe I would talk to them while I was pooping... depends on who is on the phone.
For the record, if someone called me while I WAS peeing in a public restroom, I'd still answer it.
*Shrug* Everyone pees. Gosh.
