We played that anything that came from community chest cards, income tax, and luxury tax went into the "pot" in the center of the board, and whoever landed on free parking got it. The pot would build up several times over the course of the game.
We also consolidated houses...if you had three houses on all three properties, then you just put three on one of them so there was never a problem with not enough houses.
We played a lot when I was a kid (no video games in our household!), and we actually made up our own cards at some point. My mom cut them out of posterboard and wrote them...they were "railroad" cards and you took one on any railroad you landed on.
We never added the interest to get stuff out of hock. You just paid up what you received for the mortgage.
I can't think of any other special rules we used.
