i've ordered "pittsburgh blue" or "black and blue"
some places can do it, some can't.
it takes a really freakin' hot surface to make the outside edges almost burnt black while the inside is still a nice cool purple... mmmmmm.
and uh yeah, a fat steak to start sher helps. holy cow i'm hungry now.

and i have no idea where the pittsburgh term comes from.
