I'd say beyond medium rare and you have to toss it but then I like mine very rare.
Personally I love a good steak frites... Steak with a green pepper sauce and some thin crispy frites... mmmmm.
When I cook a good sirloin, I put very little on it other than some salt and pepper and maybe a little garlic.
