As woot said, there tends to be a lot of mercury in tuna. That's not very good for you in general. Secondly, you're more or less starving yourself. A can of tuna and an apple, even with a multivitamin is going to leave you pretty malnourished. Expect to get sick much easier, feel tired all the time, lose all the muscle mass you've gained at the gym as your body literally "eats" itself. You're asking for various electrolyte abnormalaties, which can mess with your muscles, brain, kidneys, and so on.
In short, my opinion is that it is a VERY bad idea.
Also, your metabolism is going to slow down so much that once you start eating regularly you'll probably pack on the fat.
