I run the audio out from my DVD player into my Hi-Fi and run an audio only CD writer from it. I get very good quality results, but have to manually increment the track numbers.
Once I've done that, I've got an audio CD I can process exactly like any other.
There are software tools that let you rip the audio from DVD direct to mp3 or wav, but I've not used them, so I can't comment.
