I'm currently in Taiwan, and don't have any real problems getting ripped off. I think it's a fair amoun different than it was 10 years ago now, really the only places without price tags are the night markets, and even a lot of the stands in there have them.
Best way I always found to not get ripped off is ask more than one vendor for pricing, some of them are nice and honest, some not so much. As well, ask around about the prices people paid for things. It's common to ask here, so people usually don't mind.
