Spoiler: well, the plans for the Death Star was shown in EP2. but what we saw at the end of EP3 wasn't the inner structure. But was in fact the Death Star Prototype. something as big but far less powerful so they could test the firepower of the Main weapon and to get an idea of what was needed to build the actual Death Star
That information was given to me but a hard core Jedi nerd who got that info from a Star Wars guide to Vehicles and Vessels.
