Sandwiches are, and will always be, my weapon of choice when it comes to battling hunger on road trips. If you can bring a cooler or portable fridge along in the car with you, I'd recommend going with that.
There are, of course, the essential snacks such as jerky, candy (especially hard), and trail mix. Crackers (I recommend Wheat thins) and Easy Cheez is good, but especially hard if you're the driver.
