Beef jerky works really well, it's relatively healthy and keeps your mouth busy longer so you don't eat it as fast. Trail mixes do very well too, but they're both dry foods so make sure you've got something to drink!
As far as drinks go anything is good if you like it and it has a screw-on cap, nothing sucks more than spilling a drink 2 hours into a 10 hour drive, they're almost impossible to clean up quickly, if you can clean them up at all, and then you get to deal with whatever you spilt it on for the rest of the trip!
