It depends upon a lot of things. What are her interests? How much money do you have to spend, how much time do you have, do you have transportation, etc.
Here's the key: Ask her what she likes to do. If it's something you can afford, do it.
There are a lot of cheap, "getting to know you" activities. Play cards, an easy to learn game like hearts, or if there are two couples, a nice partners game like canasta or spades. Basically free, and makes for good interaction.
Party games are good, like pictionary or charades.
I always liked amusement parks, as it gave my date a chance to put his or her arm around me on the rides we rode close together on.
Rent movies and watch them together--a good horror movie makes for a good excuse for her to bury her head in your chest and for you to put your arm around her.
Put on some music and dance together.
If the weather's nice, go for a walk, or even better, go on a picnic and take along a frisbee.
Miniature golf is a nice, cheap, fun way to share some time.
But let me reiterate: Ask her what she wants to do, and do that.
