The colors and textures come from what you inhale (all the stuff in air and such). The mucus is actually the plasma and all the dead antibodies, bacteria and viruses that get killed by your body during an infection or a disease. The mucus while you are not sick is just plasma, I think. This is just the way I always though of it, could be completelly wrong though.
