Unfortunately, I haven't played very far in FF8 and higher, mostly because I don't own a PS2, so my reponse isn't entirely fair. Out of the others, however, FF6 was my favorite. Gameplay, story, characters... it was beautiful.
7 was fun, but I thought it was too large. I tend to lose interest after a while. Video game ADD, I guess.
The original was also excellent.
Overall, the graphics have gotten better, but I don't think the games have.
Not that I won't play them.
