They package adware because it gives them the money they need to keep the program alive and put food on their table. Maybe you personally would donate for a program without advertisements, but it's been proven over and over that the vast majority of people will not. None of these software companies can stay alive with only 1 in 100 or fewer users paying.
I'm not saying that I support intrusive adware, far from it. I don't mind in the slightest though, getting a quality program for free just for letting them display a small banner add in the program. The issue for me isn't the adds, it's what
else the advertising program may be trying to do.
