Definitely do Laksa - my favorite dish ever.
Laksa Broth:
Coconut milk
Chicken broth
Red Curry (Penang Curry)
Salt
Pepper
Garlic powder
Sugar
Start with coconut milk and thin it with chicken broth until like a med. thick soup, slow boil or simmer, add spoonfuls of red curry paste until it reaches desired hotness. Add other ingredients to taste. Should be sweet/spicy/salty all at the same time.
Put Egg Noodles, Shrimp, Bean Sprouts, Celery, Onion, and whatever veggies suits you. Can also put chicken or beef chunks. Cook until flavor of broth is absorbed into all ingredients.
Serve as a soup in a LARGE bowl and eat with both spoon and chopsticks.
