how about quiche? cant get easier than that.
You'll need:
One 9-inch pie crust (about 2 dollars)
8 slices bacon, cooked and crumbled ( a pack of bacon is about 2 dollars here)
3/4 cup shredded Cheddar cheese (cheese is about 3 dollars here)
3/4 cup shredded Swiss cheese (see above)
4 eggs, well beaten ( about $1.50 for a dozen)
1 cup sour cream ( (about $1.50 here)
1/2 cup half & half (under a dollar)
1/4 cup green onions, chopped (under a dollar)
1 Tablespoon all-purpose unbleached flour
3/4 teaspoon salt
Black and/or red pepper to taste
Paprika to garnish
Crumble bacon into the bottom of prepared pie crust.
Sprinkle cheeses on top of bacon.
Combine remaining ingredients in a bowl and pour over bacon and cheese.
Bake at 375 degrees for 40 to 45 minutes.
Let cool 10 minutes before serving.

You can substitute other items in for the bacon and cheese if you want; just watch the water content of veggies going in the quiche.
