Smash Bros. would make an excellent arcade game: easy to pick up, incredible depth, 4 player action, would benefit from having a big monitor.
how bout an arcade mariokart? it'd be easy to get full size go-karts for each player to sit in w/full forcefeedback effects.
super monkey ball: i know this was already an arcade game first... but they should transport the cube versions and modify them to be controlled by a pedestal you stand on and lean in each direction.
a "shooter on rails" (like virtua cop and time crisis) based on the doom series. the atmosphere and enemy lists could make this intense.
warioware inc. is super-easy to pick up and has a frantic pace that would translate to the arcade well.
dynasty warriors might translate into a cool arcade experience. so much is going on in those games, it would benefit from having greater graphical resources and having units side-by-side for co-op mode.
