Evil Dead 2 wasn't exactly a remake of 1. I forget the details of the official story, but it goes a little something like this. It was put out by a different distributor so they didn't have the rights to show an introductory montage of what happened in part 1. So they re-did the events of part 1 leaving out the unnecessary characters within the first few minutes of the movie. The sequel actually begins when the Evil Force picks up Ash and carries him through the woods, because that's where part 1 ended.
And as for the remake, I look at it this way. George Romero has been trying to make another film in Night of the Living Dead franchise forever but has lacked the funding. Then the studios remade Dawn of the Dead. It was a hit and now Romero has the funding for his fourth Dead film. Hopefully this Evil Dead remake will yield similar results.
