It's flavour depends who, where, when, and how you handle the game. The deer I harvest eat grass and seed crops similar to cattle rather than sagebrush and twigs which tend to taste the shits. Keeping it clean, dust free and into a cooler ASAP makes a huge difference.
Anyways, I hope one day you get the chance to try a decent cut of venison.
