hello i love chilli...
cooked a good chilli for many friends throughout my time at uni, this is the best i could do:
serves 8-10:
1/4 cup veg oil
3 pounds, 1.5kg coursely ground beef, 'chilli ground' or just use mince
1 onion, peeled and finely chopped
4 garlic cloves, peeled and finely chopped
1 tablespoon of paprika
5-6 tablespoons of chilli powder
1 tablespoon of cumin
1 tablespoon of dried oregano
one can of tomatoes
1 teaspoon of salt
1 cup of water
2 jalapeno chilli. deseeded and chopped
1 teaspoon cayenne
3 cups (500g) of cooked pinto beans
1 cup of finely grated cheddar cheese
heat oil.
cook beef until all brown.
add onion, garlic and cook til soft.
add paprika, chilli powder, cumin and oregano, stir and cook for a couple of mins.
add can of chopped tomatoes, salt and water.
add chillies and cayenne.
bring to boil.
cover and cook on low heat for 2 hours.
stir occasionally so that nothing sticks.
add more water if needed.
add pinto beans at last minute, just to heat through.
serve with boiled rice and sprinkle with cheese.
mmmmm...tasty...
this stuff lasts for like days in the fridge so it can be made in advance, perfect for parties...and it freezes really well.
