You might try a few things like hiking or ecotours. Here are two links for Maui, in particular:

I agree, getting away from the tourist areas will get you to true Hawaii. There are similar trips on every Island. Whenever we go, we schedule a day or so to get the tourist junk out of the way, then spend the rest of the time snorkeling and exploring. It takes a few days to a week to rid yourself of your mainland Hana (work) Ko'iko'i (stress). Only then will you begin to experience real Aloha.
We went on a whale watch tour one Tuesday afternoon. We toured out into the water and watched these magnificent swimmers throw themselves out of the water and crash back down. Completely amazing. Towards the end of our afternoon out there, the boat captain lowered the swim ladder so we could dive off the stern into the cool Pacific Ocean. In spite of my current clothes, I dove in anyway. Once I reached the apex of my dive, deep in the water, the air bubbles surrounding me were gone. As I slowly ascended back to the surface, my ears took in the beautiful call of the nearby whales. It is something I will never forget.
Go search for tours like this, or PM me if you want more info.
