Rickman as Snape was the only casting decision Rowling insisted on. She told the movie producers that she had written Snape in the book with the mental image of him playing the role from Day 1.
His death would almost be too expected, although Voldy and the rest of the Death Eaters have made it very clear that his defection puts him high on the hit list. I would rather see his character continue to have serious issues about helping his childhood nemesis' kid for a cause that he knows to be good.
