Pepper-Lime Chicken!

This recipe is one I keep in my head, so I’m just writing it down as I remember it…
Ingredients:
4 boneless skinless chicken breasts
2 Tsp shredded lime peel
2 cloves minced garlic
˝ cup lime juice
1/4 cup Tequila or Rum
1 bunch of cilantro, finely chopped
1 Tbsp Black peppercorns, cracked, not ground
1 dash of cayenne
1 splash extra virgin olive oil
Mix alcohol and lime juice and marinate the chicken in it overnight. Save the marinade.
In a hot pan, combine the oil, peppercorns, lime peel, garlic, cayenne, and ˝ of the cilantro, and let it simmer for a short time to bring out the flavor. Add the remaining marinade and reduce heat. Simmer gently until it reduces to a thicker texture. Separate this into 2 bowls, 1 for a sauce to serve with the chicken, and 1 as a brush on for the grill.
Grill chicken as normal, occasionally brushing on the mixture from above as you cook. If there is any excess sauce left over, do not mix it back in with the remaining sauce if you’ve been using a brush, as it may contain bacteria from touching uncooked chicken.
Safety first…
Serve chicken with a splash of the sauce over it and sprinkle cilantro over the top, goes very well with rice or a greens salad.
