It's actually really hard to explain, and a lot of bands with very different sounds get bunched into the genre. Some bands I consider post-rock are:
Godspeed You Black Emperor!
Silver Mt. Zion (side project of above)
Explosions in the Sky
Mogwai
Do Make Say Think
Broken Social Scene
Mum (with more of an electronic sound)
Rachel's (I like to think of them as the only classical-post-rock group around)
