Are you sure about that? I didn't see Excalibur, but the "O Fortuna" that shows up in most movies and advertisements is usually from "Carmina Burana" by Carl Orff. It is a kick-ass choral piece.
EDIT: Yeah, I just checked the
IMDB.com soundtrack listing for Excalibur, and it's Orff.
