Up and coming, I recommend:

MMO:
World of Warcraft (PC)
Everquest II (PC)

RTS:
WarHammer 40k: Dawn of War (PC)
Armies of Exigo (PC)

RPG:
Fable (Xbox)
KOTOR II (Xbox)

I've either played, tested or seen first-hand all of the above games, and they are quite impressive.

EDIT: Except KOTOR II... I haven't played or beta'd it... but I mean, come on... it's GOTTA be good, right?
