It takes 18-24 hours to finish, not including cooking time. It has to rise in the fridge overnight. That's what helps it get the chewy texture you're after. Maybe cut back on the salt just a bit from what he recommends. I also ignore his topping advice.
Be sure to put the oven as high as it will go when cooking it, or it won't brown properly.
