I love chinese and japanese food, and mexican and italian are always good, but for sheer flavor, complexity, and genius of preparation I have to go with Thai food. Indian and vietnamese are both excellent as well. I've had french, and can cook some of it (no where near as much as I can make of all the others though), but have never been overly impressed. American food just sucks though, it's only one step up from british food, which is a few steps below boiled boot leather.
