I love Fountain of Wayne's version of Britney Spears' "Hit Me Baby One More Time", but that's already been mentioned. I also am a big fan of all the covers from the Nirvana Unplugged album, but those too have already been mentioned.
I guess the best not already mentioned is Toad the Wet Sprocket's version of The Beatles "Hey Bulldog".
