Long Version: FF1's difficulty is entirely dependent on the composition of your party. The "traditional" party of fighter, black belt, white mage and black mage is actually a pretty difficult party to finish the game with. Because the game severely rations magic, both of the mages are basically useless during the game's many random encounters and only marginally useful during boss battles The rationing of magic causes the game to greatly favor physical attacks over magic. This rationing causes a fighter/fighter/fighter/red mage or a four fighter party to be the two most powerful parties. The red mage has a few spells (Fast comes to mind) which assist the fighters during difficult boss battles, the red mage has a reasonably high physical attack level for random encounters and the red mage can use the spell "exit" which allows the party to leave the final dungeon. The only cons to a four fighter party are the cost of weapons/armors in the game and a small amount of difficulty in early dungeons (marsh cave) if you try a low-level game. The money con is greatly offset by the LARGE numbers of magic swords (were,bane,giant,ect) you receive from chests. The game throws a huge number of powerful swords at the party after the battle with Astros. This allows the four fighter party to avoid paying for weapons and focus on upgrading armor every few towns. The free swords, coupled with the ability to avoid buying very expensive spells, allows the four fighter party to always carry 99 potions and still have tons of money left over for when Pro Rings appear in shops.

Short Version: FF1's difficult is solely dependent on your party's composition, and a four fighter party will make FF1 one of the easiest RPGs you have played in your life.
