I'll be there from Aug 28th to Sept. 12th at Bavaro Village
My parents were there a few years ago in Ibostar Bavaro.
PC/ Bavaro has nothing except resorts and a few locals. The nearest town is Higuey and that doesn't have much.
The resort will be pretty sweet, I hope you're not going alone, there might not be many people in the same age range as you.. (24/29 here)
Anyways, theres lots of tours, Isla Saoma sound fantastic, some of the Jeep tours sound cool. If you're used to traveling around 2nd/3rd world places you can go anywhere on the bus for $2usd so you're limited by time.. There is supposed to be some good surfing north of Bavaro.. Bring your own snorkle gear, and find a local with a boat for $10 - $15USD you can go tour the area and snorkle around the reef (30km long)
Mangu at Occidental Flamenco is where the best night life is at.
