i'll just use the answer i gave to my girlfriend last time she asked:
i love you because you're different, you're different from me (so we balance out), and you're different from any other girl i've met (how typical to say).
i love you because you make me laugh and when i'm with you very little bothers me. I love you because your smile always makes me smile.
I love you because you are a lady, yet so playful. I love you most of all because you can think for yourself. I love you because you can be the sweetest in the world.
i think those all can apply in a general sense to things to love about girls.. although i'm sure some people would rather you stopped thinking for yourselves ;-) (jk)
