The pasta recipe Maleficent posted sounds good... there was also a good grilled portobello sandwich recipe that was posted here a little while ago. You could omit the bread and just have grilled portobello 'steaks'. Maybe that and some rosemary-garlic potatoes, or a salad. Hmm I'm getting hungry...
