Normally, jokes involving Asian or East Indian characters are on dimensional and as a result are lame.
It's different in this movie because the two main characters are, respectively, Korean and East Indian. The movie is told from their point of view.
So when, for instance, Harold's boss leaves work for the day telling a colleague "It's no problem these guys love crunching numbers" (or someting like that) I assume after telling Harold to work overtime, the camera pans up to reveal Harold standing at a window looking disgusted.
It's funny but also sharp and subersive. The comment Harold's boss makes is racist, yet it's a comment you here all too often in movies (in one way or another). Now, in the usual dumb comedy we wouldn't get the asian character's perspective leaving no chance for subversion of the stereotype. The character would be one note and either play against type or, worse yet, play into it.
It's almost as if we are seeing the world try to force Harold into a convenient stereotype and the movie, refreshingly, shows us what it feels like to be in that position. While making us laugh our asses off.
Okay. I'm now done giving my dissertation on the Harold & Kumar Trailer.

yes, there a point in time where Harold relucatantly under his breath calls himself a Twinkie, yellow on the outside and white on the inside. While there are stereotypes that pervade the movie, there are also common elements to everyone like bullies, shyness, parental/family/cultural stress.
