Chicken comes in cuts more convenient for cooking, like boneless chicken breasts. A boneless chicken breasts is just about one serving size, and grills up quickly. And even without the skin, chicken can be fairly moist and tender if you don't overcook.
Turkey doesn't come in such small, convenient cuts, and hardly anybody ever fries or sautees it -- too dry. Even if you bought a turkey breast without the rest of the turkey, it's going to be big enough that you'd have to cook it by roasting it, which takes a while. Best to let the butcher cut it into slices and put it in a sandwich.
