Sounds to me (with out THGL's additionally requested details) that you have a pressure build up that is resolved when opening the faucet, manifest by the noises you hear.
Usually they sound like the pipes are knocking or bumping something inside the walls.
There is a little bulb like section of copper that you can sweat into the cold water line to keep pressure noises from happening. Pressure relief valve I guess would be the right words.
I've only seen and heard about them, never installed or had one installed...as I'm not a professional plumber either....
