Crockpots-- my favorite cooking gadget

Spicy Black Bean Stew
1/4 cup Chicken Broth
1 large onion, chopped
2 medium red bell peppers
4 tbs minced garlic
1 stalk celery, diced
2 large carrots , diced
3 cups fresh or canned tomatoes
1 cup Bloody Mary Mix
2 cans black beans
1/4 cup diced, canned green chilies
4 tsp chili powder, or to taste
1 tsp cumin
1/2 tsp coriander
Salt and pepper to taste
In a skillet over medium hight heat, bring broth to simmering; add onions, bell pepper and garlic. Cover and steam 3 minutes. Spoon into slow cooker.
Add remaining ingredients except salt and pepper. Cook on low 6 to 8 hours, or until stew is thick. Salt and pepper to taste. Serve with rice or in a tortilla.

BBQ'd Pork (for a Pulled Pork Sandwich)
1 1/2 lbs. cubed pork
1 lb. cubed beef
1 (6 oz.) can tomato paste
1/4 c. vinegar
1/2 c. brown sugar
1 tsp. salt
1 tbsp. chili powder
1 lg. chopped onion
1 chopped green pepper
Mix together in Crock Pot, cooking at least 8 hours.
Shred meat with fork before serving on good buns or hard rolls.
(you could also use your own bbq sauce )


I have another recipe for Nawth C'alina BBQ in a crock pot thats awesome-it's just not in my current drive.
