Here's a great tasting recipe for a chicken caesar salad:
1 boneless skinless chicken breast per person you want to serve
olive oil
dark soy sauce (I use kikkoman's)
a bag of caesar salad you can get at the grocery store, or make your own
dried basil
chopped garlic or garlic powder
Trim the fat off the chicken, put into a bowl and pour olive oil and soy sauce in equal portions until the breasts are covered. Add black pepper and basil to taste, and a little garlic. I probably wouldn't use more than 2 cloves of fresh or a teaspoon of dried.
Let that marinade in the fridge for about an hour, then put the chicken breasts in a hot pan. There is no need to oil the pan because the chicken already has oil on it. In the mean time, divide up the salad into however many bowls you'll need. When the chicken is done, chop up into bite sized pieces and put into salad bowls, dress with croutons, parmesean cheese, and caesar dressing. Serve immediately.
