It's hard to really have an appreciation for it unless you actually try it yourself. It takes a lot more than being able to rhyme in order to be a good MC. Just because we know how to write doesn't mean that we are any good at it. In part, that's why it's "amazing" to hear a person that can really flow. We can all rhyme, but there's only so many people that can do it off the top of their head, make sense, and make you go "damn!."
I lot of mainstream rap is made to make money, not necessarily to show off the lyrical skills of the rappers/artists. Accordingly, the lyrics suffer, making people assume that all you have to do to be able to rap is to make sentences rhyme. With practice, anybody can take a pre-written rhyme and spit it out, but that doesn't mean they are going to do it well. It's not just about getting the lyrics out, there's also delivery, tone and style. Also, many talented MCs go unheard, partly because record companies look for artists that can sell.
