I always thought this was some sort of urban legand. I lived my whole life on a dairy farm and in the summer, would wake up at 5:30am to round up the cows in the field and I never, repeat never saw a cow sleep standing up. In the winter they would sleep in the free stall barn and when I went in a 6am to start milking, all 60 of them would be in one of the stalls lying down.
Maybe the cows are dumber, more lazy to lie down or whatever where you are from but I have never seen it. Would like to one day though.
